Do hellSmiths have the option to take pistols? What options do they have?

There aren’t any rules in the Legion of Azgorh list for anything called a “Hellsmith” specifically. Your best bet is to use the Hellsmith model to represent a Daemonsmith Sorcerer (often just called Daemonsmiths on the forum here) or a Infernal Castellan - both of which may take pistols.
Daemonsmith Sorcerers may also be equipped with Naptha Bombs
Infernal Castellans may also be equipped with Shield, Great Weapon, or a Fireglaive.
Infernal Castellans used to be called Dark Castellans in the early previews of the list, and this has snuck its way back into the rules for the upgrade to a battle standard bearer - immediately below the Infernal Castellan it says that a Dark Castellan may be upgraded to carry a BSB.
