So, I’ve been painting up my imperial griffon (2 headed) and was planning on using it in friendly SoM games as a summoned creature.
I was wondering firstly, what its stat line is versus the ordinary (if there is such a thing) griffon, and also whether one is allowed to summon these vs regular griffons in SoM games (ie if there was some ammendment in the last year)

No, as far as I’m aware there’s no binding scroll for an Imperial Griffon (they’re all bred in captivity, hence their unusual size) but I don’t see any reason you couldn’t use one with your opponent’s agreement. Just pay the points cost given in The Empire book and allow the same options. There’s no difference in cost between a mount option and an unridden monster across the system.

I shall pick up a copy of The Empire sometime, and use the rules there. The idea of a mage wrenching one from an Imperial Zoo and binding it to their own will really appeals to me. That, and I'd love to field an Amber Mage on one as a marauder sorcerer mounted on one. They're an amazing kit, and SoM seemed like just the excuse to field one as a mount or free-running monster.
I shall definitely include photos of them with my army once I've finished the painting :)
