Yes the Taurus is better in combat and with the bonus of protection against fire magic looks like the better choice but unless your playing a complete newbie, nobody is ever going to target the Taurus with fire magic.
I find the Taurus a dangerous option in a lot of ways as it encourages you to get into combat.
The Lammasu lets you do everything the Taurus does - fly around their army, get into good positions without being trapped, get your lord in range for leadership and magic but as it isn’t the best in combat, you very rarely charge in and even the easiest of combats you think about it rather than dash in.
Plus the addition of another caster is good.
